Miyako Bijin sits in Hyogo and works with Gohyakumangoku rice. The brewery formed in 1945 when ten small producers joined forces. It was first called Awaji Shuzo, then took the name Miyako Bijin in 1959. Toji Kunihiro Yamauchi leads production today. He oversees all sake, umeshu, and liqueurs made at the brewery.
