COUNTRY: Mexico
REGION: Jalisco
Just south of central Guadalajara, in the state of Jalisco (best-known for the famous agave distillate born in Tequila), partners Pedro Andrés and Jorge Nájera are behind some of Mexico’s most creative and sought-after spirits. Among them are a range of gins (showcasing evocative botanicals and representing an array of flavor profiles) and their alluring plátano eau de vie – painstakingly produced using nothing more than fresh local bananas (lots of them), water, and sugar. It’s transportive and often unavailable, so get some while you can.
Satvrnal has deservedly become a darling of the top bar programs not only in Guadalajara but throughout Mexico, as each of their bottlings offers much to enjoy on its own or built into cocktails that stand out.
