Thomas Bouet is a polycultural farmer and natural winemaker based in Sanilhac, a picturesque village on the banks of the Gardon River near Uzès. With family roots in the area dating back to the 17th century, Thomas returned in 2018 to take over his family’s land, where he cultivates 5 hectares of vines and collaborates on an additional 3 hectares with Ad Vinum’s Sébastien Chatillon. Alongside winemaking, he produces olive oil, sunflower oil, peach nectar, apple juice, grape juice, strawberries, almonds, and einkorn, embracing a holistic approach to farming.

Thomas’s winemaking journey began in 2016 with purchased organic grapes, and by 2019, he released his first official commercial vintage. His wines are crafted with minimal intervention: manual harvesting, indigenous yeasts, no sulfur additions, and gentle pressing with an old vertical hydraulic press. Despite their southern origins, his cuvées are celebrated for their freshness, delicacy, and low alcohol, brimming with energy and finesse. With a small cellar on his family’s farmhouse property, Thomas has quickly made a name for himself, producing vibrant, natural wines that reflect both the terroir and his deep connection to the land.
