Les Dolomies, a standout in the natural wine world, was established in 2008 by Céline and Steve Gormally in Passenans, Jura. Starting with a single 1.44-hectare parcel, the domaine now spans 5 hectares across six plots in five villages, including the renowned Château-Chalon. Named after the magnesium limestone in the region, Les Dolomies is rooted in biodynamic principles, certified organic farming, and a commitment to expressing Jura’s unique terroirs. Céline, who honed her skills under Jura legend Julien Labet, focuses on **“ouillé” wines**, topping up barrels to avoid the oxidative styles often associated with the region, resulting in fresh, mineral-driven wines of elegance and precision.
The domaine cultivates classic Jura varieties such as Chardonnay, Savagnin, Trousseau, and Pinot Noir, with vines ranging from 50 to 80 years old. In the cellar, interventions are minimal: whites are whole-bunch pressed and aged in old Bourgogne barrels, reds undergo gentle macerations and short aging, and all wines are bottled unfined and unfiltered. Sulfur use is minimal, with reds often made without any additions. Les Dolomies also produces sparkling **Pet-Nat** wines and a **Vin de Liqueur** called Carmina, showcasing their versatility and creativity. Since leaving the Côtes-du-Jura AOC in 2016, Céline and Steve have embraced complete freedom in their winemaking, earning a reputation for vibrant, terroir-driven wines that embody the spirit of the Jura.
